Bamboo is resistant to water but under no circumstance should water be left to pool on its surface. It is recommended that area rugs or mats be placed in front of the sink or stove to not only prevent wear but to also catch spills that may go unnoticed. Cleaning is relatively simple requiring light mopping and sweeping. Beware that sweeping is very important as these floors can scratch. You could use dark are rugs to pull in the darker color or the cabinets, or get some of the funky new gel mats for ease underfoot in a dark color. I have built many homes and had the same initial regrets for how a choice turned out, but if you look at it as part of the karma of the process and go with the flow, you will find a way to turn a weakness into a strength. If you didn't invest in the cabinets, you can also paint them. I had oak cabinets and really didn't like the stain and wanted a calmer kitchen, so I primed and painted them a gloss dark color.
